Cajun Style Potato Salad

The best Cajun style Potato Salad you will ever eat! Serves 10-15 people

Ingredients:
5 lbs. – Idaho potatoes (or your favorite type)
1 lb. – Thick Cut Bacon
4-5 – Green onions Chopped GREEN Part only
1 ½ cups – REAL mayo (NO miracle whip)
1/3 cup – Yellow Mustard
½ – medium size yellow or red onion
2 -3 Tbsp. – Tonie’s Cajun seasoning (to taste)
2 tsp. – Young bucks steak seasoning

Prep work:
– pre-slice entire 1 lb. of bacon into small bite size pieces
– cut up 5 lbs. of potatoes into small bite size pieces
– chop green onions using only the bright green tops, and re plant the rest for re-use later.
– Thinly chop ½ yellow onion into very small pieces

Instructions:
In one large pot, season water with Young Bucks BBQ steak seasoning. Bring water to a Boil water and add potatoes. At this time start frying all your bacon, cook till crispy ( you don’t want floppy fat in this dish, even if that is how you like it for breakfast) Boil till tender but do not overcook. (test potatoes by using a fork and pressing a potato piece against the wall of the pot, you are looking for little pressure/resistance for the potato to give and smash) once done drain water and place in a large pan. Drain the bacon grease, green onions, yellow onions, real mayo, Tony’s Cajun seasoning, and mustard to the pan with potatoes.
With potato masher *with 1 pass only* smash random spots (no more than 6-7 times) then stir all ingredients until evenly spread.
At this time, you may adjust the mayo, mustard, or Tonie’s until you reach that flavor that best suits you. Just add a little at time, don’t mess it up 🙂

This potato salad is amazing served warm! But also, good cold.
